Ingredients for the recipe:

500gcooked chickpeas
400gcarrot
3onion
4garlic clove
2tbsptahini
1lemon
1tsplemon zest
salt
1tbsphoney (or maple syrup)
1tspitalian oregano
1tspthyme
0.5tspblack pepper
sprinkle cinnamon
200mlcold water
  1. Wash and peel the carrots.
  2. Cut the carrots into four pieces. Cut one carrot into thin slices and put it aside.
  3. Add the carrot pieces and water to a pot and put it on medium-high heat on the stove. Add a little bit of salt and bring it to a boil. Cook for 15 minutes or until the carrots are soft.
  4. Peel the onion and garlic cloves.
  5. Cut one onion into rings, add them to the carrot slices and set aside.
  6. Chopp the other onions.
  7. Mince the garlic cloves.
  8. Wash the lemon. Zest the lemon.
  9. Add olive oil to a pan and put it on the stove on medium-high heat.
  10. Add the onion and saute for about two minutes.
  11. Add the minced garlic and lemon zest and saute for another minute until everything has a beautiful gold color and the aroma is set free.
  12. Remove everything from the pan.
  13. Add some olive oil again to the pan and set the pan to low-medium heat.
  14. Remove the cooked carrot pieces from the water.
  15. Saute the onion and carrots slices for about 5 minutes.
  16. In the meantime, add the chickpeas, cooked carrots, spices, salt, juice of a lemon, sauteed onion, garlic cloves, lemon zest, tahini, honey, and cold water to a blender or food processor. Blend until everything combines well and you have a beautiful creamy dip.
  17. Pour the dip on a plate.
  18. Garnish with the sauteed onion rings and carrots slices.
  19. Sprinkle a little bit of salt and honey on top.
  20. ENJOY!
