how to make the perfect summer cookies
- Preheat the oven to 180° C/ 350°F and line a baking sheet with parchment paper- set it aside.
- Melt the butter.
- In a food processor, shred the pistachio nuts and set aside.
- Mix the flour, lemon zest, and baking soda in a bowl and set to the side.
- Mix brown sugar, melted butter, vanilla extract, and eggs in a separate bowl- beat until well combined.
- Add the flour mixture and shredded pistachio nuts to the wet ingredients. Mix carefully until well combined. Don`t overmix it.
- If you have time, put the dough for 30 minutes in the fridge.
- Take one scoop of cookie dough and place it on the baking sheet. Place the cookie dough scoops 5cm (2 inches) apart.
- Bake for 8-10 minutes if you like the middle soft and chewy ( the ends should be golden brown and the middle slightly underdone. If you want a well-done cookie, bake for 10-12 minutes (the whole cookie should look done).
