Ingredients for the recipe:

320gall-purpose flour
1tspbaking soda
250gmelted butter
250gbrown sugar
100gpistacchio nuts
1tsplemon zest
2eggs
1tbspvanilla extract

  1. Preheat the oven to 180°C / 350°F and line a baking sheet with parchment paper - set it aside.
  2. Melt the butter.
  3. In a food processor, shred the pistachio nuts and set aside.
  4. Mix the flour, lemon zest, and baking soda in a bowl and set to the side.
  5. Mix brown sugar, melted butter, vanilla extract, and eggs in a separate bowl- beat until well combined.
  6. Add the flour mixture and shredded pistachio nuts to the wet ingredients. Mix carefully until well combined. Don`t overmix it.
  7. If you have time, put the dough for 30 minutes in the fridge.
  8. Take one scoop of cookie dough and place it on the baking sheet. Place the cookie dough scoops 5cm (2 inches) apart.
  9. Bake for 8-10 minutes if you like the middle soft and chewy (the ends should be golden brown and the middle slightly underdone. If you want a well-done cookie, bake for 10-12 minutes (the whole cookie should look done).
