This delicious soup is perfect for a quick, warm, comfortable meal. The potato soup is an ideal beginner or pantry recipe as it only requires 3 Ingredients, which we all have in the pantry/fridge. But don’t get fooled by the ingredient list. The soup is still full of flavor.

  1. Add the water to a pitcher and put it next to the stove. Get a pot that is big enough to make the soup. If you are unsure how to check it, put the potatoes and carrots in the pot and make sure that there is enough space to add water and stir it without it over boiling.
  2. Wash the carrot and potato with water.
  3. Peel the onions, carrot(s), and potatoes.
  4. Chop the onions and put them aside.
  5. Cut the carrots and onion into small cubes.
  6. Put a pot on the stove on high heat and add your oil of choice.
  7. Saute the onion for 30 seconds. Then, add the potato and carrot cubes. Saute for 2 minutes and stir it the whole time. The potatoes should have a beautiful brown color but not burn. If the heat is too high, lower it to medium.
  8. Add water and salt and cook for about 20 minutes on medium heat.
  9. In the meantime, prepare the toppings.
  10. Check if the potatoes are soft.
  11. If the potatoes are soft, remove the soup from the heat and blend it with a hand blender(easiest), a heat-resistant blender, a food processor, or whatever you have available.
  12. Put the pot back on the stove and cook for 5 minutes on low heat.
  13. The soup is ready to serve with your favorite toppings.
