Oh, how I love this easy recipe! It’s addictive, filling, and has so many different flavors with just a few ingredients - simply amazing. This Sandwich is an homage to my beautiful island. In the Dominican Republic, we eat avocados for literally every meal. One of the best breakfast/snacks is definitely an Avocado salad with onion, vinegar, olive oil, and salt. We use pan de agua (bread) and stuff the Avocado salad in the bread, and it’s just heaven - trust me.

My favorite bagel is simple bagels with sesame seeds on top.Avocado.
For one bagel, there is one small ripe Avocado needed. Avocados are a fantastic choice for healthy fats. They will help keep you full for hours.Cherry tomatoes.
The cherry tomatoes will add some sweetness to the Sandwich.red Onion.
They are much needed in this recipe. Without the sauteed onion, it will taste like a simple Avocado toast and not a full-of-flavor sandwich.Apple cider vinegar.
The apple cider vinegar adds a sourness to the sandwich, which harmonizes perfectly with the Avocado and the sweetness of the bagel.Salt.
I prefer sea salt.

Toast.
An amazing alternative for the recipe.Sourdough bread.
Be careful with the apple cider vinegar, as the sweetness from the bread is missing to balance everything out. But it will taste amazing, though.Ciabatta.
I love to make the sandwich with ciabatta.Focaccia.

It is a simple Dominican water bread known in many other countries. Here are some facts about its origin

- Peel the onion and cut it into thin rings.
- Wash the tomatoes and cut them in halves.
- Put a small pan on medium-high heat on the stove. Add some olive oil and onion rings and saute for about 3 minutes or until the onion rings are soft.
- Add one tablespoon of apple cider vinegar and some salt to the onion and remove from the stove.
- Cut the Bagel into two slices and toast it golden brown.
- Cut the ripe Avocado in two halves and remove the flesh from the shell. Add the flesh to a bowl and mash it with a fork.
- Add some sea salt and half teaspoon of olive oil and mix well.
- Spread the Avocado cream on the Bagel halves and put the tomatoes on top. Now spread the sauteed onion on top and put the top part of the bagel on top.
- The Avocado Bagel is ready to serve!
