- Spinach. Baby spinach is perfect in this recipe.
- Tomatoes. Cherry tomatoes or tomatoes with a sweet and sour flavor for the best experience.
- Feta. You can add other white cheese if you don’t like Feta cheese, but the combination of all the ingredients tastes the best with feta.
- Salt. Just a little bit for the eggs and filling, but be careful, as the Feta itself is very salty. Taste it before adding salt to the rest.
- Spices. Thyme, Oregano, and Rosemary are perfect.

- Wash the fresh spinach and tomato.
- Chop the onion.
- Cut the feta into cubes or make feta crumbles.
- Add a little bit of olive oil to a pan and put the pan on the stove on medium-high heat.
- Saute the chopped onion for about 30 seconds.
- Add the spinach and tomatoes.
- Add salt, rosemary, thyme, and oregano.
- Remove from the pan and put it aside.
- Beat the eggs softly with a fork until the egg yolk and egg white are well combined. Add a little bit of salt to it.
- Melt some butter, olive oil, or any oil you prefer in a pan at medium-high heat.
- Add the beaten eggs and turn the heat to low medium immediately. Let the eggs get slowly cooked.
- Turn the omelet upside down when no visible liquid is on the surface.
- Add cooked spinach, tomatoes, and feta to half the omelet and fold it.
