I love salads! But to be honest, there are many delicious salads that take way too long to make. All the cutting and chopping sometimes take longer than cooking a whole meal from scratch. Therefore we need salad recipes that are exciting and not boring but still effortless in the making. This asparagus blueberry goat cheese salad is one of those. It is made in 10 minutes, and you don't need to cut and chop too much.

  • Asparagus. We are using green asparagus for this recipe. The healthy vegetable is popular for a good reason. It is so much easier to cook than white asparagus, it is a good source of antioxidants, can improve gut health, may help lower blood pressure, and is super healthy, especially for pregnant women as it is high in folate.
  • Lamb's lettuce. This salad is the perfect choice for this healthy spring salad recipe. If you don't have Lamb's lettuce, use baby spinach instead.
  • Blueberries. The high in nutrient berry is the perfect source of sweetness for this salad.
  • Tomatoes. Simple cherry tomatoes. You can choose the ones that taste sweet or the ones which have a sweet and sour taste; both fit perfectly.
  • Goat cheese. A block of goat cheese which you can serve as crumbs or cubes, you are free to choose.
  • Orange. The orange is going to be needed for the dressing. We will need the zest and juice.
  • Lemon. Another citrus fruit for this easy meal. The lemon will make the dressing extra fresh.
  • Mustard. Only a little bit, as it can dominate too much. But this is the ingredient that makes this easy healthy lunch perfect.
  • Honey. What would mustard be without honey. This is optional.
  • Balsamic vinegar. The perfect vinegar for the asparagus salad. Balsamic vinegar and Lamb's lettuce fit perfectly together.
  • Olive oil. Organic native olive oil for the perfect taste.
  • Salt. No other spices are needed.

how to make the salad

  1. Wash the salad, tomatoes, asparagus, blueberries, and orange
  2. Cut the asparagus into smaller pieces.
  3. Set a pan at medium-high level on the stove and add some olive oil.
  4. Add the asparagus pieces, sprinkle some salt on top, and saute for about 3-4 minutes.
  5. In the meantime, cut the tomatoes into halves.
  6. Add the washed salad, blueberries, goat cheese, and tomatoes to a big bowl.
  7. Add the balsamic vinegar, lemon juice, orange juice, orange zest, mustard, salt, olive oil, and honey to a glass and whisk together until well combined.
  8. The asparagus should be tender but not super soft.
  9. Add the asparagus to the bowl and pour the dressing over.
  10. Mix everything well together until the salad is covered with a dressing.

  • The salad can be stored in an airtight container in the fridge for about two days if the dressing is already in the salad.
  • If the salad and dressing are stored separately in the fridge, the salad will last for about four days.
